On Wednesday, November 22, 2023, the Wyoming County Business Center along with the Wyoming County Chamber & Tourism celebrated a ribbon cutting for the grand opening of Parkside Diner, located at 6240 State Route 19A, Castile, NY.
Parkside Diner is the vision of Kristy Geising Scott who is managing the restaurant and the Gitsis family who are well-known for the Silverlake Family Restaurant in Warsaw. Kristy is a graduate of the Wyoming County Business Fast Track program and she fine-tuned her business plan with the Wyoming County Business Mentorship program before launching.
Parkside Diner features classic diner fare, all-day Pizza, all-day breakfast, and homemade soups. The Diner is open every day (except Monday) until 3 pm and until 8 pm on Fridays and Saturdays. The featured dish on the weekend is a one-of-a-kind Buried Barrel Hard Cider battered fish fry with a choice of potato and salad bar. Parkside Diner has a host of other offerings such as breakfast pizzas and a large variety of traditional pizzas with a wide assortment of toppings.
“We are trying to bring back that feeling of home-cooked comfort food that has been missing in the area for some time. We want the community to feel welcomed and know we are here to serve them,” said Kristy Geising Scott. “We will also be open for hunters, for snowmobilers as well as for the park visitors and local campers. I plan to be baking and making homemade pies and desserts as we get situated over the next few weeks.”
Breakfast time is a focal point, and to support the local maple syrup industry, they are using real maple syrup for their large pancakes called “Jumbo Jacks” and French toast meals. Kristy added, “We are making pancakes the size of the platter because we like them big!” She also noted that they will get their alcohol license soon and will be serving cider, select beers & wine, as well as mimosas for the late weekend breakfast patrons.
The kids are welcome to the Diner with specials including floats, Shirley Temples, and kids’ meals priced for family dining. The restaurant offers Veterans a discount and they will have online ordering soon, as well as a loyalty card that will give dollars back for all the purchases made at Parkside Diner and Silverlake Family Restaurant. Interested customers can connect with them on Facebook, Instagram, and they will start live video feeds on YouTube in the future sharing new things coming in the spring.
“We are very excited to expand with our restaurant in the Castile community. Our family has been in the restaurant business serving the area for over 33 years in Warsaw and we felt it was the right time to rehabilitate the property our father Steve has owned for many years,” said Nick Gitsis. “He appreciated the people and had many friends in the area, and Stevie very much loved the rolling hills of Wyoming County. With our investment in the business, my sister Angela and I would like to build on our father’s legacy, and together with Kristy’s hard work ethic and warm enthusiasm we are confident that the business will serve the community well.”
